Is there an existing documentation on how to do this or is it just a case of creating a new database, and a total new instance of egw for every company that I plan to host? Could you please point me to the article or HOWTOs to accomplish this?

Well, yes I'm doing this allready.
Just use different domain for each company and install for each
company on its own hosting egw.
Then you now it's secure and every company can config egw to their
own needs.
