Hi,
I regret answering in the first place, as this is only leading you into
a dead end (non updatable eGroupware).
As Nathan suggested, use custom fields!
If you want to place them in all tabs and not just a custom field tab,
remove that tab. The custom field widget can also display a single
widget (compared to all cf widgets together). These single widgets can
be placed where ever you like.
Documentations about the cf widget is in the header of
etemplate/inc/class.customfield_widget.inc.php. You might need to use
the trunk/1.6 version, as I’m not sure this stuff got backported to good
old 1.4.

If name is present as a db table, the selected value will get stored it

…but it won’t get retrieved.
So i suppose we need some sort of call in Function view of the same file.
