On each ticket changes, the user receive an e-mail to show what was
changed.
Is possible customize what info the user will receive?
E.g. I don’t like to send the information about the “Priority” to
user.
How may I hide this information?

For maximum flexibility we use "Do not inform about these changes"
option (at the bottom of the page, near the save and cancel buttons)
when we change minor things in the ticket mask. This way, the technician
can judge if the user has to be informed about the changes.
